10 Minutes Strawberry Mousse

Sugar free, diary free, egg free and guilt-free this strawberry mousse can be made in 10 minutes. A perfect dessert when you invite people that have food intolerances or when you don’t have much time but still want something that looks refined and tasty. Plus, its very healthy 😉 Blend, serve in pretty glasses and it’s ready!

Ingredients:

  • 850 gr Frozen strawberries
  • 250 ml Coconut milk
  • 1 Tablespoon honey (or more to taste)
  • The juice from 1 orange
  • Garnish (Optional)
    • Strawberry slices
    • Freeze dried raspberries
    • Coconut shavings
    • Coconut cream
    • Mint

Directions:

  1. Add all of the ingredients to a blender and chop then liquefy/puree until smooth. For a smoother mousse, (and easier to blend!) you can defrost a little (30 seconds at a time in the microwave) the strawberries until some juice comes out and a few strawberries  feel softer to the touch. Taste and add more honey if wanted.
  2. Divide equally in glasses and garnish as desired. I decorated mine with chopped frozen raspberries, a splash of coconut cream and coconut sprinkles.
  3. Keep in the fridge for up to 1 day
