A speciality from Austria, the Linzer cookie is a very delicate sandwich cookie filled with jam. I made this recipe last year so this is kind of a repost but as I made a batch, I couldn’t help uploading the pictures again on the blog in case you missed this delicious recipe. I adapted the original recipe to a gluten free flour so I just added an extra egg yolk for a smoother dough. If you choose to make it with a normal all-purpose flour you can omit that extra egg yolk.
I used the homemade apricot jam I made this summer and the fact made it taste twice as nice! 😉 Almond flour and the caster sugar dusting make it a very refined cookie that is also beautiful as a Christmas gift.
